Breakfast Roll-Ups

Ingredients:

4 whole wheat tortillas

4 large eggs

1/2 cup reduced fat milk

1 cup vegetables of choice (broccoli & onion used here!)

4 large slices or 8 small slices of turkey or ham (8 small slices of turkey used here!)

1/2 cheddar cheese

Instructions

  1. In a bowl, whisk together eggs, milk, salt and pepper, any vegetable of choice (onions and broccoli chosen here).
  2. Heat a nonstick pan to medium heat. Pour in chopped vegetables and cook until soft. Pour egg mixture over vegetables and scramble eggs. (Allow eggs to cool completely if making ahead of time)
  3. Lay out 4 whole grain tortillas. Lay down deli slices first (turkey used here). Divide the cooked and cooled egg mixture over the four tortillas. Top with shredded cheddar cheese. Fold in the ends of the tortilla and roll it up.
  4. Either eat immediately or wrap burritos individually in cellophane and tinfoil. Unwrap and heat in microwave or toaster over before serving.
