Cottage Cheese With Minted Pineapple


  1. 1 cup thinly sliced pineapple
  2. 1 tablespoon sugar
  3. 1 tablespoon chopped fresh mint
  4. 1 1/2 cups low-fat cottage cheese
  5. 2 tablespoons pomegranate seeds


  1. In a medium bowl, toss the pineapple with the sugar and mint; let sit for 5 minutes.
  2. Divide the cottage cheese between 2 bowls. Dividing evenly, top with the pineapple mixture and pomegranate seeds.
